    The first Labor Day in history was celebrated in 1882 with a huge parade and a picnic for New York City workers! News of the joyous day soon spread and other cities and states began to celebrate the day as well. By 1894 the first Monday in September became a legal holiday to pay tribute to the people who created so much of the strength and prosperity of the Unites States of America.

    Although Monday is dedicated to honoring the achievement and hard work of Americans, what’s really on people’s minds during Labor Day Weekend, is the end of the warmth of summer, being careful not to wear white, sending the kids back to school and the beginning of the football season!

    We celebrate with a wonderful three day weekend (for most) where we try to hang on to the last fleeting moments of summer. What better way to celebrate the end of summer than with an awesome BBQ… Meat House style! We have prepared for you a very unique burger recipe that will bring some flavor and fun to your last summer weekend, the Spicy Guacamole Burger!

    Spicy Guacamole Burger

    1 ½ pounds of 85% ground hamburger

    ½ pound short ribs, ground

    2 tablespoons extra virgin olive oil

    3 scallions, sliced

    2 teaspoons ground cumin

    2 teaspoons ancho chili powder

    2 teaspoons dried oregano

    2 teaspoons fresh jalapenos, seeded, minced

    1 teaspoon of sea salt

    1 teaspoon of freshly ground black pepper

    6 slices pepper jack cheese

    6 burger buns, preferably brioche, toasted

    Mix hamburger, short ribs, oil, scallions, cumin, ancho chili powder, oregano, jalapeno, sea salt, and pepper together. Be careful not to over mix or the burger will be tough. Form 6 patties.

    Grill

    Place your patties on the grill and cover over medium direct heat about four to five minutes per side (to an internal temperature of 160 degrees for medium). Turn the burgers only once. Top the burger with cheese in the last minute of cooking just to melt the cheese.

    Guacamole

    4 ripe avocados

    1 clove garlic, minced

    ½ white onion, finely chopped

    3 tablespoons cilantro, finely chopped

    1 large tomato, seeded, roughly chopped

    1 teaspoon smoked paprika

    1 teaspoon cumin

    Juice of 2 limes

    Kosher salt, to taste

    Peel and core your avocados and place them in a mixing bowl with the other ingredients. Mix ingredients together well. Place in refrigerator 30 minutes before serving.

    Place your burgers on the brioche buns and top with your homemade guacamole. Enjoy with friends and family by your side and a cool drink in your hand!

    This burger is perfect to impress your friends at your game day party and quick enough to make on a school night! We have to admit, it’s quite perfect for the end of summer and the start of the new school year. End your summer with a bang (and a little spice too)!
